Discover the art of bladesmithing and cooking with Sam on Ireland’s wild west coast near the majestic Cliffs of Moher. Forge a high carbon steel blade, carve a unique wooden handle, and learn to sharpen and maintain your new knife with Japanese whetstones. Then, cook a meal with local produce gathered from nearby farms, putting your new blade to use. Outside the studio, immerse in the Irish countryside, surf the world-famous Aileens, and visit a nearby bakery, one of the best in Ireland.

Meet the Artist

Sam is a bladesmith, blacksmith, and furniture maker known for crafting sculptural knives and tools from reclaimed steel and locally sourced wood. His journey began with a lathe gifted by his father. Years later, he restored one of his father’s old knives with help from renowned maker Fingal Ferguson—an experience that set him on the path to bladesmithing. Today, Sam’s knives are collected worldwide by chefs, home cooks, and design enthusiasts, and are held in the National Museum of Ireland’s permanent Arts and Metals collection.

While best known for his knives, Sam’s work spans blacksmithing, woodcraft, sculpture, and furniture making. He forge-welds high-carbon steels—modern and salvaged—from Japanese and German blades to antique ship chains, cartwheel rims, and whiskey barrel hoops, creating functional tools that are also sculptural heirlooms. His ergonomic handles come from native Irish hardwoods, orchard offcuts, storm-downed trees, and ancient bog woods, each rich with history. Inspired by makers like William Morris, David Nash, and Peter Korn, Sam’s work explores humanity’s connection to nature, waste, food, and craft, blending traditional forging, precise furniture-making, and environmental awareness.

With a diverse background as a teacher, chef, furniture designer, outdoor educator, and international development coordinator, Sam brings broad experience to his craft. He and his wife Niamh recently co-created immersive outdoor food and craft experiences and are building a community craft and cookery school.

  • Forge a bespoke high-carbon steel chef’s knife, with options for complex designs for advanced skill levels.
  • Sculpt a unique handle from native hardwoods, reclaimed wood, or bring your own heirloom material.
  • Learn to sharpen and maintain your knife’s edge with Japanese whetstones.
  • Prepare a shared meal with Sam and Niamh featuring their family favorite dishes, using seasonal ingredients while honing your knife skills with the knife you’ve just made.
  • Visit a nearby organic farm to select ingredients, plus pick up sourdough bread and pastries from one of Ireland’s best bakeries, just a few miles from the studio.
  • Walk the Cliffs of Moher, or hike down the goat path to the coast below—a great spot to forage wood.
  • Optional yoga classes with Sam’s friend or visit seaweed baths, hot tubs, and sauna overlooking the Cliffs, if time permits.

Stay at Sam's

Stay with Sam in a lovingly converted 40-foot shipping container nestled into the hillside beside the forge, overlooking the surrounding woodland. The space is suitable for 4 people and includes a double bedroom, bathroom with shower, lounge with kitchen and dining area, a double sofa bed, a wood stove, infrared heaters, and beautiful countryside views. Basic breakfast ingredients and homemade lunch are included with the stay. Please note the container isn’t wheelchair accessible and may be challenging for guests with limited mobility, though Sam is happy to assist with the steps if needed.

Ennistymon is a lively market town on Ireland’s west coast, just an hour’s drive from both Galway and Limerick, and a short distance from the iconic Cliffs of Moher. Surfers, artists, musicians, and farmers all call this place home, creating a warm and eclectic community. Michelin-starred restaurants sit comfortably alongside cozy pubs filled with music, storytelling, and pints. It’s an ideal base for exploring nearby wonders—the wild, lunar-like Burren and ferry rides to the ancient Aran Islands. With a slower, soulful rhythm of life and a culture of salvaging, making, and living close to the land, Ennistymon is both a retreat and a source of inspiration for artists drawn to nature’s raw edge.

Additional Details

The best time to visit Ireland is from late spring to early autumn, when the weather is mildest and daylight hours are longest. Winters are colder and wetter with shorter days but remain relatively mild compared to many northern countries. Ireland’s lush summer and green countryside come with frequent rainfall. Overall, the weather is changeable, so layering and flexible plans are essential to fully enjoy its vibrant landscapes and coastal beauty.

Adults 18 years and older are welcome to participate. Sessions can be adapted for children with prior discussion. Unfortunately, the studio is not wheelchair accessible.
